Mayonnaise

Mayonnaise is an "oil-in-water" - emulsion produced from oil, egg yolk, vinegar, salt and spices. The traditional mayonnaise system is stabilized through the glycerophospholipids found in the egg yolk.

Products with fat contents below 50% need an additional stabilization, e.g., through BEKAPLUS ? M.
